13 Dry-Brined Turkey Recipes Worth the Extra Planning

by rahul jangid October 4, 2026

Dry-brining is one of the easiest ways to turn a Thanksgiving turkey into a deeply seasoned, juicy centerpiece with beautifully browned, crisp skin. Instead of soaking the bird in a large container of salty water, dry-brining seasons the turkey directly with salt and gives it time to rest uncovered in the refrigerator.

The extra planning is mostly hands-off: season the turkey 12–48 hours before roasting, refrigerate it uncovered, then roast it when you’re ready. The salt gradually works into the meat while the refrigerator dries the skin, helping it brown and crisp more effectively.

These 13 recipes take that basic technique in different directions—from classic rosemary and garlic to maple-thyme, Cajun spice, citrus, smoky paprika, and even a spatchcocked version.

Important: These recipes assume a fresh or fully thawed, non-kosher, non-enhanced turkey. Check the package first. If the turkey has already been injected or contains an added salt solution, adding a full dry brine can make it too salty.

1. Classic Rosemary & Garlic Dry-Brined Turkey

This is the classic version for cooks who want traditional Thanksgiving flavor: garlic, rosemary, thyme, sage and plenty of golden, crisp skin.

Ingredients

  • 1 whole turkey, about 12–14 lb, fully thawed
  • About 2½–3 tbsp Diamond Crystal kosher salt, adjusted for bird size
  • 2 tsp freshly ground black pepper
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp fresh thyme leaves
  • 1 tbsp chopped fresh sage
  • 4 garlic cloves, minced
  • 4 tbsp unsalted butter, softened
  • 1 onion, quartered
  • 1 lemon, halved
  • 2 cups low-sodium turkey or chicken stock

Step-by-Step

  1. Remove the turkey from its packaging and take out the neck and giblets.
  2. Pat the turkey thoroughly dry with paper towels.
  3. Combine the kosher salt, pepper, rosemary, thyme, sage and garlic.
  4. Sprinkle the mixture evenly over the entire turkey, including the cavity.
  5. Place the turkey breast-side up on a rack over a rimmed baking sheet.
  6. Refrigerate uncovered for 24–48 hours.
  7. Remove the turkey from the refrigerator while the oven preheats to 325°F (163°C).
  8. Rub the softened butter over the skin.
  9. Place onion and lemon in the cavity and pour stock into the roasting pan.
  10. Roast until a thermometer registers 165°F (73.9°C) in the appropriate thickest areas.
  11. Rest for at least 20–30 minutes before carving.

USDA guidance says turkey should reach a minimum internal temperature of 165°F, measured in the thickest breast and innermost thigh/wing areas.

Bright lemon zest balances the richness of roasted turkey and gives this recipe a fresh, aromatic character.

Ingredients

  • 12–14 lb turkey
  • 2½–3 tbsp kosher salt
  • 1 tbsp lemon zest
  • 2 tsp black pepper
  • 1 tbsp chopped rosemary
  • 1 tbsp thyme
  • 1 tbsp sage
  • 4 garlic cloves, minced
  • 4 tbsp unsalted butter
  • 1 lemon, quartered
  • 1 onion, quartered

Step-by-Step

  1. Pat the turkey completely dry.
  2. Mix salt, lemon zest, pepper, rosemary, thyme, sage and garlic.
  3. Rub the mixture evenly over the turkey and inside the cavity.
  4. Place the bird on a rack and refrigerate uncovered for 24–48 hours.
  5. Take it out while the oven preheats to 325°F.
  6. Rub butter over the skin.
  7. Fill the cavity loosely with lemon and onion.
  8. Roast until the thickest portions reach 165°F.
  9. Rest before carving.
  10. Garnish with fresh lemon slices and herbs.

Tip: Don’t rinse off the dry brine unless your particular recipe specifically calls for it. Rinsing can add surface moisture and work against crisp skin.

Maple and thyme create a slightly sweet, earthy turkey that’s especially good with roasted root vegetables and cranberry sauce.

Ingredients

  • 12–14 lb turkey
  • 2½–3 tbsp kosher salt
  • 1 tbsp dried or fresh thyme
  • 2 tsp black pepper
  • 1 tsp garlic powder
  • 3 tbsp pure maple syrup
  • 4 tbsp unsalted butter
  • 1 orange, halved
  • Fresh thyme sprigs

Step-by-Step

  1. Pat the turkey dry.
  2. Combine salt, thyme, pepper and garlic powder.
  3. Season the entire turkey.
  4. Refrigerate uncovered for 24–48 hours.
  5. Before roasting, combine maple syrup with softened butter.
  6. Brush a thin layer over the turkey skin.
  7. Add orange halves and thyme to the cavity.
  8. Roast at 325°F.
  9. Watch the skin toward the end because maple can brown quickly.
  10. Continue cooking until the turkey reaches 165°F.
  11. Rest before slicing.

A maple-thyme dry-brined turkey is also a great flavor combination for gravy. A similar maple-thyme dry-brined preparation uses salt, thyme and maple for a festive sweet-savory profile.

For maximum richness, this version combines a simple dry brine with a flavorful garlic-herb butter.

Ingredients

  • 12–14 lb turkey
  • 2½–3 tbsp kosher salt
  • 2 tsp black pepper
  • 6 garlic cloves
  • ½ cup softened unsalted butter
  • 1 tbsp chopped rosemary
  • 1 tbsp chopped thyme
  • 1 tbsp chopped parsley
  • 1 tsp paprika

Step-by-Step

  1. Pat the turkey dry.
  2. Season with salt and pepper.
  3. Refrigerate uncovered for 24–48 hours.

  6. Push some herb butter underneath the skin.
  7. Rub the remaining butter over the outside.

Garlic-herb butter is a particularly natural pairing with dry-brined turkey; published dry-brined turkey recipes commonly use softened butter and fresh herbs before roasting.

Spatchcocking removes the backbone and flattens the turkey, allowing the bird to roast more evenly and generally faster than a traditional whole bird.

Ingredients

  • 2½–3 tbsp kosher salt
  • 2 tsp black pepper
  • 1 tbsp dried thyme
  • 1 tbsp chopped rosemary
  • 1 tbsp chopped sage
  • 4 tbsp olive oil or butter

Step-by-Step

  1. Place the turkey breast-side down.
  2. Use sturdy poultry shears to remove the backbone.
  3. Flip the turkey over.
  4. Press firmly on the breastbone to flatten the bird.
  5. Pat completely dry.
  6. Season with salt, pepper and herbs.
  7. Place on a wire rack over a baking sheet.
  8. Refrigerate uncovered for 24–48 hours.
  9. Rub lightly with oil or butter before roasting.
  10. Roast at about 425°F (218°C), checking temperatures early because flattened birds cook relatively quickly.
  11. Continue until the thickest portions reach 165°F.
  12. Rest before carving.

Spatchcocking is especially useful when you want more even cooking between breast and legs, and dry-brined versions commonly rest uncovered in the refrigerator before high-heat roasting.

Essential Dry-Brining Tips

1. Start with the right turkey

Choose a turkey that has not already been brined, injected or enhanced with a salt solution. Otherwise, the additional salt can produce an overly salty result.

2. Give yourself enough time

For a whole turkey, 24–48 hours is a convenient target. Dry-brining can be done for longer, but follow a tested recipe and keep the bird properly refrigerated. Serious Eats recommends at least overnight and notes that larger birds can benefit from longer resting periods.

3. Keep the turkey uncovered

Placing the seasoned turkey on a rack in the refrigerator allows air to circulate around the skin. This helps dry the surface and promotes browning.

4. Don’t rely on the clock alone

Turkey size, shape, oven performance and starting temperature all affect cooking time. Use a food thermometer.

5. Don’t repeatedly baste

For crisp skin, repeatedly adding watery pan juices can work against surface browning. A single coating of butter or oil is a better approach for encouraging browning.

6. Always cook to a safe temperature

USDA recommends a minimum internal temperature of 165°F (73.9°C) for turkey. Check the thickest part of the breast and the innermost thigh and wing areas without touching bone.

7. Let it rest

Resting allows the juices to redistribute and makes carving easier. For a large turkey, around 20–30 minutes is a practical target.

Conclusion

Dry-brining takes a little advance planning, but most of that time requires almost no active work. Salt the turkey, place it uncovered in the refrigerator, and let time do the seasoning.

The payoff is a turkey with deeper flavor, juicy meat and drier, crispier skin.

For a traditional Thanksgiving dinner, the Classic Rosemary & Garlic Turkey is an excellent starting point. If you want something different, try the Maple-Thyme, Cajun, Apple Cider, Spatchcock, or Orange-Cranberry versions.

And because dry-brining doesn’t require a large container of liquid, it can also make holiday preparation easier when refrigerator space is limited.

FAQ

1. What is a dry-brined turkey?

A dry-brined turkey is seasoned with salt and other dry seasonings before being refrigerated for an extended period. Unlike wet brining, the turkey isn’t submerged in water. The salt draws moisture to the surface, dissolves, and is gradually reabsorbed into the meat.

2. How far ahead should I dry-brine a turkey?

For a whole turkey, 24–48 hours ahead is a useful planning window. At minimum, overnight is recommended for larger birds when possible.

3. Should I rinse the turkey after dry-brining?

Generally, no. Rinsing can put moisture back on the skin and reduce the drying effect that helps create crispness.

4. Can I dry-brine a turkey that is already injected?

It’s best not to use a standard dry-brine recipe on a turkey that has already been injected, enhanced or treated with a salt solution. Check the package label first.

5. Does dry-brining make turkey salty?

When the amount of salt is matched to the turkey’s size and the bird hasn’t already been salted, dry-brining should produce well-seasoned meat rather than simply a salty surface. Salt also affects the proteins in poultry and can help reduce moisture loss during cooking.
